    Bourbon, Brown sugar, Chipotle Peppers, Asparagus and Shrimp. As far as I am concerned, these are the five wonders of the world. Shrimp is always a winner in my book for any meal but I especially love this recipe because it requires minimal effort and just a dash of love that makes this dish a winner at my table for lunch or dinner.

    The bourbon paired with the sweetness of rich brown sugar and spicy delicious chipotle peppers gives the shrimp the foundation to marry happily ever after.

    I made this dish for the first time to surprise my husband and my younger brother with a special surprise meal as a reward for being a good sport. Two weeks prior to this meal, I made my entire house eat a vegetarian diet. My husband and brother did much better than I thought they would. Nobody in my house seems to know how to boil water, so they will eat what I prepare or its cereal for the night. As I explored a new way of life, they were supportive, never complained and they were always excited to see what I was making each day.

    When I told my husband and brother I was preparing a meal with meat, they screamed of relief. Almost like a sad screech from a scene in the Hunger Games.

    However, I did not tell either of them exactly what I was preparing.

    As I finished this meal and begin to fix plates, I forgot one very, very, very, important thing, my brother is allergic to shrimp.

    I don’t think I need to paint a picture of the look of disappointment when my brother saw me tossing one plate and adding kale and quinoa salad to another.

    We ended up taking him to a drive-thru.

    As for my husband and I, we let no shrimp have mercy and devoured each shrimp one by one. The mild spiciness is what really brings this dish together.

    I decided at my next dinner party, I would serve the shrimp on a platter and it worked so well for a great last-minute dish to throw together. I marinated the shrimp, and threw it in the oven right before my guest began to arrive.

    The bourbon brown sugar chipotle shrimp and asparagus easily plates beautifully.

    Pro tip – Add shrimp to salads, wraps, or rice for a new dish if you have leftovers.

    Bourbon Brown Sugar Chipotle Shrimp

    Yield 4 servings

    Ingredients

    • 1 lb large shrimp
    • 1 bunch asparagus, chopped
    • ½ cup bourbon
    • ¼ cup Worcestershire sauce
    • ¼ cup brown sugar
    • 4 tbsp. butter
    • 2 chipotle peppers, chopped
    • 2 cloves garlic. minced
    • 1 tsp cayenne pepper
    • 1 lemon, juiced
    • Chopped Cilantro
    • ½ tsp Salt
    • ½ tsp black Pepper

    Cooking essentials:

    • 1/2 cup of olive oil
    • salt

    Instructions

    Preheat oven to 425 degrees.

    Step 1 – Prepare the Marinade

    1. In a medium pot on medium high heat, add bourbon, brown sugar, Worcestershire sauce, butter, chopped chipotle peppers, minced garlic, cayenne pepper, cilantro, salt and pepper
    2. Bring sauce to a boil and simmer for 5 minutes.
    3. Remove from heat and set aside to cool completely.

    Step 2 – Marinate the shrimp

    1. In a Ziploc bag, add shrimp and Marinade. Make sure each shrimp is covered completely. Marinate for 30 minutes

    Step 3 – Cook the Asparagus

    1. In a medium skillet on medium high heat, drizzle olive oil. Add asparagus to skillet and cook 5-7 minutes until asparagus begins to brown.
    2. Remove from heat, add a dash of salt and pepper and set aside.

    Step 4 – Finish

    1. In a medium baking dish, add shrimp marinade and asparagus.
    2. Bake for 10-12 minutes just until shrimp Is tender.
    3. Remove from heat, plate and enjoy!
